I don't feel guilty eating them either because they are so much more healthy then regular muffins!! If you used regular whole wheat flour, you might want to decrease the amount slightly. Froze the batch and took to work with a bag of hard-boiled eggs…one egg and one muffin made a filling breakfast–pleased to report I made zero trps to DD in the food court this week. I like to take one muffing out in the morning and eat it cold with the hot coffee or i heat it in the microwave for about 30 minutes.
